3 Autumn Recipes To Make This Year - theskinnyfoodco

Now that Autumn is rapidly creeping up on us, it's time that we started thinking about what treats and dishes we can start making to keep us all feeling warm and cosy. The season of salads is over and now it's all about the comfort foods of soups, baked goods and indulgent hot drinks. In this blog, we're here to give you 3 delectable Autumn recipes to make this year. 

We guarantee that once you've made these, you will be ready for an end of the year snuggled up on your sofa in front of the fire.


Autumn Recipe #1 - Spiced Butternut Squash Soup

The first quick, easy and ridiculously tasty Autumn soup recipe that we're going to talk about today is a firm favourite in the Autumn: Spiced Butternut Squash Soup. For this recipe, you will need:

-1/2 butternut squash, roasted

-1 garlic clove, roughly chopped

-1 tsp. each ground cumin and coriander

-800 ml (1 pint 7fl oz) vegetable stock

-200 ml (7fl oz) coconut milk

-1 tbsp. pumpkin seeds

 

All you'll need to do is whizz the roasted butternut squash flesh in a blender until smooth, add the garlic and spices and whizz again for 30secs. Then, add this mixture into a large pan and pour over the stock and coconut milk then bring it to the boil so that it thickens. Once boiling, turn it down and cover to simmer for 15 mins.

Lastly, remove from the hob and blend again until even smoother. Give it a taste test and add more seasoning if you desire. As a finishing touch, sprinkle the soup with pumpkin seeds and freshly ground pepper. There you have it, the perfect Autumn soup recipe! This dish is best served with our Skinny Food bread which you can make using just 4 eggs, 150g of Cream Yoghurt, mixed with our bread mix.


Autumn Recipe #2 - Cinnamon Swirls 

The next is an Autumn dessert recipe that'll warm your soul from being crumbly and indulgent, and of course, it is cinnamon swirls. For this Autumn recipe, all you'll need is the following:

-50g butter (at room temperature)

-50g demerara sugar

-1 Pack of Ready Roll Puff Pastry (375g)

-1 tbsp ground cinnamon

-Extra sugar for sprinkling  

-Skinny Food egg replacer (to glaze)


For the Icing:

-2 tbsp Icing Sugar

-Few drops of warm water  

 

Preheat your oven to 180°c (160°c for fan ovens or Gas Mark 3) and line a baking tray with parchment paper. Then, grab a bowl and mix the butter, sugar & cinnamon together until you have a pasty consistency. For the pastry, you want to roll it out and onto enclosed paper- don't worry about the shape as you can neaten your swirls later on.

Add the cinnamon filling with a spoon, but make sure to always leave a 1cm gap at the edge of the longest sides. Using the enclosed paper, gently roll the pastry into swirls, leaving the gaps to seal the swirls in place. Use a knife to cut the pastry into sections; you can make them as big as you want! 

Place them on the baking tray and use our egg replacer to lightly coat the swirls, and sprinkle a little sugar over them. Leave for 20-30 mins before baking. Then, place them in the oven for approx. 20 minutes until golden brown. As a final touch, mix the icing sugar with a little drop of water and drizzle over the swirls- voila!


Autumn Recipe #3 - Honeycomb Latte

Our last Autumn recipe is a short and easy one, but one that's perfect for an afternoon treat or morning pick-me-up. For our honeycomb latte, you'll need:

-Honeycomb Flavoured Instant Coffee

-Zero Calorie Non-Dairy Hazelnut Creamer

-Whipped cream

-High Protein Chocolate Crispies to garnish

And this one is pretty straight forward! Add boiling water to your chosen amount of coffee, then squirt in our hazelnut creamer before stirring until mixed in well. Add the whipped cream on top and then the crushed up chocolate crispies and there you have it; a delicious and indulgent coffee using only the best.
