- 1 Red Pepper
- 1 Whole Avocado
- 30g Sweetcorn
- 30g Black Beans
- 50g Cheddar Cheese
Step 1: The great thing about Chicken Burrito Bowls, or Poke Bowls is that they're fairly simple to assemble, and require fresh mostly uncooked vegetables. We're going to start by prepping and chopping all of our chosen vegetables, this includes slicing the fresh avocado, red peppers and any other vegetables chosen (cucumbers, cherry tomatoes or onions)
Step 2: Cut your chicken breast pieces into small bite-sized pieces and coat in our Skinny Food Co Exclusive Chipotle South West Sauce for a few minutes before frying gently on medium heat until the chicken is cooked through.
Step 3: Cook the Skinny Rice according to the back of the packet (2 minutes in water on the hob)
Step 4: Assemble the bowls by placing the rice at the base of your bowl or container, layering in your vegetables and grains, topping with cheese, chicken and then a final topping of your favourite sauces or crunchy extras, finally crack some salt and black pepper and voila!
