Vegan Tiffin Recipe

 

If you haven't made tiffin before, you'll be blown away by how simple it is to make, yet how yummy it is to eat! We've packed this one with delicious crunchy ginger nut biscuits, dried cranberries and pistachios and encased them in rich, smooth dark chocolate, giving you a crunch with every bite! Use any of our zero sugar, zero calorie syrups to give a luscious velvety feel, just like we have ... this time we chose our wonderful sugar free Golden Syrup

Delicious vegan tiffin baked with golden syrup

Makes 16 pieces

What you will need:

  • 70g coconut oil
  • 200g dark chocolate (ensure it's vegan)
  • 30ml Skinny Food Co Golden Syrup
  • 200g light ginger nut biscuits (ensure they're vegan)
  • 100g dried cranberries
  • 50g chopped pistachios

How to make:

1. In a bowl add your coconut oil to your dark chocolate & microwave for 30 seconds at a time until fully melted

2. Now add in your Golden Syrup and mix together

3. Put all of your biscuits into a freezer bag and tie tightly, squeezing the air out as you do so and using a rolling pin, bash the biscuits until you have small bite size chunks (don't overdo it, we don't want biscuit dust!)

4. In a large bowl, add your biscuits, cranberries & chopped pistachios and mix together

5. Now pour over your chocolate mixture and mix until everything is fully coated

6. Line a square baking tray with baking paper and pour your mixture in, pressing down firmly until the whole tin is filled evenly

7. Place the tiffin in the fridge for 2-4 hours until fully set, then cut into 16 individual pieces before serving!
