Vegan Strawberry Breakfast Bars Recipe
These delicious breakfast bars are flavoured with our zero calorie, zero sugar French Vanilla Barista Coffee Syrup giving the perfect amount of sweetness and filled with our 92% less sugar Strawberry Jam and lots of delicious fresh strawberries. Perfect first thing in a morning to set you up for the day, or to enjoy as a yummy snack, kids will love these too! They're low in sugar and contain one of your five a day! Perfect!
Makes 9 bars
What you will need:
- 165g self raising flour
- 110g oats
- 1.5 tbsp flaxseed
- 135ml coconut oil
- 20ml French Vanilla Barista Coffee Syrup
- 100g SFC Strawberry Jam
- 220g fresh strawberries
How to make:
- Preheat your oven to 180 degrees fan and line a square baking tray with parchment paper
- Take your flaxseed in a small bowl, add 4 tbsp water, mix well and leave to sit for 5 mins until it forms more like a paste
- Now in a large mixing bowl, add your coconut oil, flaxseed and French Vanilla Barista Coffee Syrup together and mix, before adding your flour and oats and mix until fully combined
- Take two thirds of the oat mixture and press this down into the base of your baking tray, spreading as evenly as possible
- Now spread your Strawberry Jam all over the base and dice all of your strawberries and scatter these evenly all over the top of the jam
- Top the strawberries with the remaining oat mixture, crumbling it over before pressing it down gently. This part doesn't need to be neat!
- Bake in the oven for 20-25 minutes until cooked and then allow to completely cool down in the tin
- Slice your bars into 9 individual pieces, serve and enjoy!
