Skinny Scrumptious Cinnamon Pancakes

Skinny Scrumptious Cinnamon Pancakes - theskinnyfoodco

There’s something very autumnal about cinnamon, with its warmth and sweet spice, it only makes sense in the lead-up to the ‘spooky’ season that we showcase one of our favourite products ‘Cinnamon Swirl Sugar-Free Syrup’

Whilst our cinnamon syrup is most commonly known for its pairing with coffees, did you know that you can actually use our syrups in your breakfasts, meals & home-bakes?

Today we’ll be pairing our classic cinnamon swirl syrup, with our fan-favourite Skinny Pancake Mix to create the ultimate autumnal pancake combination of sweet, spice & all things nice. So let’s get to it…

The Ingredients:

The Method:

  1. Chop the apple into small cubed pieces
  2. Gently fry the apple with the butter, brown sugar & ground cinnamon for 5-8 minutes until softened
  3. Open the skinny pancake mix and add 1 tablespoon (15g) of the mix to an electric blender. You can also use a shaker or bowl, but a blender makes it extra smooth.
  4. Next, add 40ml of water, milk or milk alternative to the mix and combine until there’s no lumps –it shouldn’t take too long!
  5. Leave to rest for a couple of minutes before adding to a pre-heated non-stick pan sprayed with light oil.
  6. Cook gently for one and a half minutes, and begin to roll your pancakes gently
  7. Once all the pancakes are rolled dish up and cover with the apple & cinnamon mixture
  8. Top with our best-selling maple & cinnamon skinny sauce

As we say goodbye to the warm summer days and welcome in darker evenings, cosy nights & all things autumn-inspired one of our favourite things to focus on here at The Skinny Food Co, is, of course, the food!  Autumn offers endless possibilities for tasty treats, and we love to showcase our healthy alternatives to popular favourite dishes.

Our Skinny apple and cinnamon pancakes are no exception, our perfectly fluffy, low-sugar pancake mix is quick and easy to make and is only 27 calories per pancake!

We’ve paired our pancake mix with some authentic autumnal flavours such as spiced apples with cinnamon swirl syrup to get us in the mood for sweater weather.

Cinnamon Swirl Pancakes

Our Cinnamon Swirl syrups offer the perfect zero-Cal alternative to making traditional cinnamon swirl pancakes. It is estimated that one portion (2 pancakes) of traditional cinnamon swirl pancakes is roughly 343 calories. Whereas our pancake mix is only 54 calories for 2 pancakes, with no added calorie or no-added-sugar cinnamon swirl syrup included!

Is it better to cook pancakes with butter or oil?

Whilst cooking pancakes in butter makes them taste great! It can be tricky (and slightly unhealthy) Cooking pancakes in butter can often brown the pancakes on the outside too quickly, without letting the inside cook. Whereas oil often leaves a lot to be desired, too much oil can make the pancakes greasy, whereas too little can cause the pancakes to stick to the pan and break apart.

Our alternative to butter & oil is our low-cal oil spray - You can grab these in a variety of flavours, it only takes one spray for a non-stick coating meaning your pancakes won’t break apart or become super greasy!

Do you rest pancake batter in the fridge?

Ideally, if you have the time it’s a good idea to rest your pancake batter in the fridge, for as little as 20 minutes to allow the flour to absorb all of the liquid, creating smoother & fluffier pancakes.

How long should pancakes cook on each side?

The best way to cook a pancake isn’t by procedure, but by eye, once you’ve placed your mixture in the already pre-heated pan or griddle, carefully watch the pancake (the side facing upwards) to see when it begins to bubble.

Bubble time may vary from pancake to pancake depending on the thickness of the mixture, once it begins to set on the upward-facing side it’s time to flip!

Be careful though - if your pan or griddle temperature is set too high the bottom will burn without allowing time for the top to set.

It’s always recommended to use your first pancake as a ‘trial run’.
