CRISPY FRIED FISH NUGGETS

INGREDIENTS

400g white fish of your choice
1/4 cup all-purpose flour
2 cups panko breadcrumbs
5 tablespoons all-purpose seasoning
2 eggs, beaten
Cooking spray

DIRECTIONS

STEP 1

Cut fish into small chunks.

STEP 2

Mix the flour and all-purpose seasoning in a bowl.

STEP 3

Coat each fish strip in the seasoned flour, dip in the beaten eggs, and roll in breadcrumbs.

STEP 4

Spray the coated fish on both sides with cooking spray, then place into the preheated air-fryer at 180°C for 3 min.

STEP 5

Shake the fish nuggets and cook for an additional 3 minutes.

STEP 6

Serve with tartar sauce or any sauce of your choice, along with your favorite side dish.

CLEMENTINE & CHILLI HALLOUMI SKEWERS

MAKES 10 SKEWERS
8 MINUTES AIR-FRY

INGREDIENTS

1 clementine, zested and juiced
3 tbsp Skinny Orange Marmalade chilli flakes, to taste
2 tsp vegetable oil
2 x 250g packs halloumi
Pinch of salt and pepper
2 courgettes cut into small chunks
20-30 cherry tomatoes

---

DIRECTIONS

STEP 1

Put clementine, marmalade, chilli flakes, oil, salt and pepper in a bowl, mix together, then set aside.

STEP 2

Cut both of the halloumi blocks down the centre through the natural split, then cut each half into eight cubes (you’ll have about 32 in total). Put the halloumi in the bowl with the clementine marinade, stir to coat, then cover and chill for at least 3 hrs, or overnight.

STEP 3

Coat the courgette chunks and cherry tomatoes with the remaining marinade just before cooking.

STEP 4

Remove the halloumi from the marinade, then thread onto a skewer mixing with courgette and cherry tomatoes. Heat the airfryer to 200C. Cook the skewers in a single layer for 6-8 mins until golden, turning halfway. Serve with your choice of dip.

JACKET POTATO

MAKES 4 PORTIONS
45 MINUTES AIR-FRY

INGREDIENTS

4 large baking potatoes
1 pinch of salt for each potato
2 tbsp of olive oil
Topping of your choice

DIRECTIONS

STEP 1

Poke some holes in the potato with a fork or skewer. Rub the olive oil onto the potato and sprinkle over the salt.

STEP 2

Place 2 potatoes in each drawer of the air-fryer at 200°C for 45-55 minutes. The time will depend on the size of the potatoes. Turn over halfway through to ensure an even crisp on the skin.

STEP 3

Poke a skewer through the potato to check it is soft throughout before removing it.

STEP 4

Once ready, remove from air-fryer. Cut open and serve with toppings of choice while hot.

1/2 cup yellow cornmeal
1/2 tsp ground cumin
1/2 tsp chilli powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
400g any white fish cut into strips
Cooking spray
Corn tortillas
Small bowl of your favourite salad
Lime wedges

DIRECTIONS

STEP 1

Mix the cornmeal and seasonings together in a shallow dish. Coat the fish strips with the seasoned cornmeal.

STEP 2

Preheat the air-fryer to 180°C. Spray the coated fish liberally with cooking spray, and place into the preheated air-fryer.

STEP 3

Gently shake and flip the fish after 4 minutes, then cook for remaining 4 minutes.

STEP 4

Serve the fish on corn tortillas with your favourite salad, sauce, and a squeeze of lime.

MAKES 2 PORTIONS

INGREDIENTS

1/2 cup Italian-style breadcrumbs
1/2 cup Parmesan cheese, grated
2 chicken breast fillets
1/2 cup all-purpose flour
2 eggs, beaten
2 slices mozzarella cheese
Small bunch of herbs, freshly chopped
Cooking spray

DIRECTIONS

STEP 1

Preheat air-fryer to 180°C.

STEP 2

Mix the breadcrumbs and Parmesan cheese in a bowl. Coat each chicken breast in flour, then dip in beaten eggs, then roll in breadcrumb mixture.

STEP 3

Spray the preheated air-fryer basket with cooking spray, place the chicken breasts inside, and spray the tops as well.

STEP 4

Cook for 10 minutes, then place 1 slice of mozzarella cheese on top of each breast, and cook for an additional 2 minutes.

STEP 5

Remove the chicken when done, then top with sauce and garnish with freshly chopped herbs.

TERIYAKI SALMON

MAKES 2 PORTIONS
8 MINUTES AIR-FRY

INGREDIENTS

1/2 cup soy sauce
1/4 cup sugar
1 tsp grated ginger
1 garlic clove, crushed
1/4 cup orange juice
2 salmon fillets
Cooking spray
Salt to taste
White pepper to taste

DIRECTIONS

STEP 1

Combine all teriyaki sauce ingredients in a small saucepan. Bring the sauce to a boil, reduce by half, then let cool.

STEP 2

Preheat the air-fryer to 180°C. Coat the salmon with oil and season with salt and white pepper.

STEP 3

Place the salmon into the preheated air-fryer tray, skin-side down and cook for 8 minutes.

STEP 4

Remove the salmon from the air-fryer when finished. Let rest for 5 minutes, then glaze with teriyaki sauce. Serve over a bed of white rice with a sprinkle of sesame seeds.

STICKY TOFFEE PUDDING

MAKES 8 PORTIONS
35 MINUTES AIR-FRY

INGREDIENTS

150g pitted dates, chopped
150ml hot water
1 tsp bicarbonate of soda
50g unsalted butter
50g white sugar
50g dark muscovado sugar
1 large egg, beaten
150g self-raising flour
1 tsp ground ginger
Pinch of sea salt

DIRECTIONS

STEP 1

Preheat the air-fryer to 170°C. Grease a small cake tin that fits in the air-fryer, and set aside.

STEP 2

Place dates in hot water with bicarbonate of soda and soak for 10 minutes. Once softened, purée the dates in food processor and set aside.

STEP 3

Meanwhile, cream butter and sugars together until combined. Add the egg and mix until incorporated, then add the flour, ginger, and a pinch of salt. Add the dates and mix until incorporated.

STEP 4

Pour into the tin and smooth out with a spatula. Place onto the air-fryer and bake for 35min.

STEP 5

Check if the pudding is cooked by inserting a wooden toothpick into the center. If the toothpick comes out clean, the cake is ready. If not, bake for an additional 5-10 minutes. If needed, cover with foil so as not to burn the surface. When cooking is complete, carefully remove and set aside. Serve warm with sauce and a scoop of vanilla ice cream.
