Cream of Rice Pudding Recipe
Ingredients:

½ cup of cream of rice (the caramel biscuit flavour works especially well in this recipe!)

2 cups of unsweetened almond milk (or other low-fat milk alternative)

½ cup of low-fat milk

1.5 tbsps of zero-calorie Skinny Maple & Cinnamon Syrup

¼ teaspoon of salt
-
One egg white
-
1 tsp of zero-calorie Skinny Vanilla Syrup

¼ teaspoon of ground cinnamon
Method:

Combine the almond milk, low-fat milk, maple & cinnamon syrup and salt in a medium-sized saucepan. Bring the mixture to a gentle simmer over a medium heat. Stir occasionally.

Whisk in the cream of rice cereal gradually. Keep stirring to make sure there are no lumps!

Reduce the heat to low and cook for about 10 minutes, stirring regularly, until the mixture starts to thicken.

Grab a separate bowl and whisk the egg whites. Slowly add about 1 cup of the hot rice mixture to the egg whites and keep whisking.

Pour the tempered egg mixture back into the saucepan and keep whisking.

Cook the mixture for another two or three minutes until it’s super thick and creamy.

Take the pan off the heat and stir in the vanilla syrup.

Pour into serving bowls and top with sliced bananas or fresh berries.
