Chocolate chip cookies have been around since the 1930s, they're a classic staple sweet treat that pair nicely with a glass of milk, a cup of tea, coffee, or even on their own. There are hundreds, if not thousands of different cookie recipes available online, with different styles such as baked cookies, cookie dough, or even cookie jars. 

At The Skinny Food Co, we've tried our hand at our fair share of cookie recipes, using multiple different flavours as experiments, of course, there is the classic chocolate chip, the mint chocolate chip cookies, peanut butter cookies, cookies with dark chocolate chunks, cinnamon cookies, gingerbread cookies and much more.

Our latest favourite baking recipes include our brand new Chocaholc Mint Chocolate Syrup, in a combination with a classic chocolate chip cookies recipe. Let's take a look: 

Chocolate Mint Cookies

Ingredients

  • 1 cup butter melted (or coconut oil for vegan alternatives)
  • 2 cups sugar
  • 3 eggs (Egg replacement for vegan option) 
  • 2 tsp Vanilla Flavour Drops 
  • 2 cups flour
  • 1/2 tsp salt
  •  1/2 teaspoon baking soda
  •  1/2 tablespoon mint extract
  • 1/2 pound semisweet chocolate chips (vegan chocolate chip alternatives)
  • 2 Tbsp Chocaholic Mint Syrup

 

Method

Preheat oven to 180 degrees and Grease two cookie sheets, you can use a standard baking tray with greased baking paper using either coconut oil or 1kcal spray.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs and vanilla and mix well. Sift the dry ingredients into the bowl and stir just enough to combine. Fold in the mint extract and then fold in the chocolate chips. Drop the batter by heaping tablespoons onto prepared cookie sheets. Bake 8 minutes. Let cool completely before removing to racks.

Choose your toppings of sauces & sweets/sprinkles. 

Store in an airtight container.

Best Baking Temperature

To achieve the best texture and flavour, chocolate chip cookies should be baked at 375°F. Cookies baked at too low a temperature tend to become hard and stale while those baked at too high a temperature turn crispy instead of moist.

How Long Do Chocolate Chip Cookies Last?

Cookies stored in airtight containers will keep up to three days. However, cookies kept in sealed Tupperware or Mason jars will keep longer. Airtight storage will prevent moisture build-up inside the container, keeping the cookies fresh longer.

Why Are My Chocolate Chip Cookies Flat?

When baking cookies, it’s important not to overbake them. Overcooking causes the cookies to spread out and lose their shape. The key to achieving the right consistency is to set the timer for around 2 minutes less than the recommended cooking time.

Tips & Tricks

• Use a fork to gently stir the batter after mixing. Don't overmix the batter.

• Keep cookies tightly covered once cooled.
