(Serves 1)
You will need:
1/2 can chopped tomatoes
Small handful of spinach
Few basil leaves
2 spring onions
4 plum tomatoes
1 red chilli
1/2tsp SFC Garlic & Herb Marinade
2 large eggs
How to make:
1. Start by preparing all the vegetables - finely chop 2 spring onions, the basil and spinach leaves and 1 red chilli. Dice 4 plum tomatoes and add all of these into a small dish with 1/2 can of chopped tomatoes.
2. Add 1/2 teaspoon of Skinny Food Co Garlic & Herb Marinade and pour this into your oven proof baking dish.
3. Crack open 2 large eggs over the mixture and bake for 15 minutes at 200 degrees.
