Are you into zesty puddings? It’s fair to say that not everyone likes chocolate-based puddings. And even if you do, lemon can be a refreshing alternative, particularly in the warmer months. 

This tasty citrus fruit has lots of health benefits. Lemon is an excellent source of vitamin C, and according to research, it can help support weight loss

If you want to swap your usual go-to indulgent pudding out for a low-sugar, lemon-based pudding every now and then, we’ve dreamed up some delicious low-sugar, high-protein lemon puddings just for you. 

Here’s how to add a little citrus goodness into your puddings.

Lemon and vanilla protein cheesecake

This dessert perfectly blends the tartness of lemon with the creamy sweetness of cheesecake. It’s also super easy to make. Just mix 20g of porridge oats with 10 ml of Skinny Food Co Salted Caramel & Vanilla Barista Syrup and use the mixture to line the bottom of a small glass. In a separate bowl, stir together 80g of fat-free yoghurt, 80g of Lightest Philadelphia cream cheese and the juice of one lemon. Spread the mixture on top of your cheesecake base and pop it in the fridge for a couple of hours until it sets. Once it’s ready, add some squirty cream and lemon zest before serving.

Lemon protein flapjacks 

Have you ever tried a lemon flapjack? It’s a surprisingly good combination, especially when you add in ingredients like cashew butter and coconut. Choose your favourite vanilla flavour protein powder to give this recipe a protein boost. You’ll need oats, raisins, lemon juice, cashew butter and desiccated coconut. Add a scoop of protein powder and mix it all together to create yummy, low-sugar lemon flapjacks. 

Greek yoghurt lemon fruit pot

If you want to keep your calories down, then swap out creamy puddings for yoghurt-based puddings. Greek yoghurt is the perfect thing to pair with a little lemon juice. Simply mix some Greek yoghurt with a couple of teaspoons of lemon juice (you may need to experiment with how zesty you like it), then sprinkle some berries over the yoghurt. You can also add a few pistachios or almonds on top for some extra protein or mix in some vanilla protein powder.

Try these high protein, low-sugar vanilla flavoured waffles. They’re so handy for making easy puddings without all the sugar! Sprinkle some blueberries, cherries and raspberries on top and add a few spoonfuls of Greek yoghurt.

Everyone knows lemon pancakes are absolutely heavenly. But you don’t have to add loads of sugar on top to make them tasty! Try this easy low-sugar pancake mix. Squeeze some lemon juice on top and add a handful of blueberries. Want to increase your protein? Top with some natural yoghurt and a few nuts or add a spoonful of peanut butter.
