Scrumpet Recipe
These delicious scrumpet cups are the result of a delicious combination of crumpets, cheese and egg and are the perfect breakfast or snack, whether you are at home or on the go!
Cheesy Scrumpet Cups
Makes 12
Ingredients:
- 6 crumpets
- 3 large eggs
- Pinch of salt & pepper
- 100g reduced fat grated cheese
- SFC Honey BBQ sauce to serve
Method:
- Preheat the oven to 180 degrees fan
- Take the crumpets and using scissors cut them up into little bite sized pieces (scissors makes this much easier & quicker!)
- Beat the eggs with the salt, pepper & grated cheese, reserving a little cheese for later
- Now soak the crumpets in the egg and cheese mixture and mix through thoroughly until all the crumpets have absorbed the liquid
- Grease a muffin tray using Skinny Food Co 1 Calorie Spray Oil
- Evenly pour the crumpet mixture into each tray and sprinkle over the leftover cheese
- Now pop in the oven for 15-20 minutes until the crumpets are golden in colour
- Leave to cool a little before serving
- Sprinkle over a little fresh parsley and serve with Skinny Food Co Honey BBQ Sauce - delicious!

Extra idea coming up!! ... Why not make these into cheesy bean cups by pressing a little hole into each one and after baking, pop a teaspoon of beans into each, top with a little more cheese and pop back in the oven for 5 minutes! Pure cheesy bean goodness!!
