Ingredients:
- Skinny Konjac Rice
- Skinny South West Chipotle Sauce
- 2 Skinless Chicken Breasts (Or Skinless Chicken Thighs)
- 1 Red Pepper
- 1 Whole Avocado
- 30g Sweetcorn
- 30g Black Beans
- 50g Cheddar Cheese
Method:
Step 1: The great thing about Chicken Burrito Bowls, or Poke Bowls is that they're fairly simple to assemble, and require fresh mostly uncooked vegetables. We're going to start by prepping and chopping all of our chosen vegetables, this includes slicing the fresh avocado, red peppers and any other vegetables chosen (cucumbers, cherry tomatoes or onions)
Step 2: Cut your chicken breast pieces into small bite-sized pieces and coat in our Skinny Food Co Exclusive Chipotle South West Sauce for a few minutes before frying gently on medium heat until the chicken is cooked through.
Step 3: Cook the Skinny Rice according to the back of the packet (2 minutes in water on the hob)
Step 4: Assemble the bowls by placing the rice at the base of your bowl or container, layering in your vegetables and grains, topping with cheese, chicken and then a final topping of your favourite sauces or crunchy extras, finally crack some salt and black pepper and voila!
What Vegetables To Include
When making a chipotle chicken bowl, it's important to include a variety of vegetables to ensure you get the most out of your meal. The classic combination includes black beans, red peppers, onions, corn and avocado. However, you can also add other vegetables such as diced tomatoes or shredded carrots for extra flavour and texture. For an even healthier option, try adding some leafy greens like spinach or kale.
What Rice To Use
The base of the chipotle chicken bowl is usually white or brown rice. White rice is a great option if you're looking for something light and fluffy, while brown rice has a nuttier flavour and more nutritional benefits. You can also opt for quinoa or cauliflower rice if you want to make it gluten-free.
Or alternatively, for an even healthier option, you can try our Konjac Skinny Rice, which is only 4 calories per serving and cuts cook time to only 2 minutes!
The Konjac rice is also an incredibly quick and effortless option if you're looking to meal prep.

For an extra kick of flavour, you can also add some diced jalapenos or chipotle peppers.
However, we at The Skinny Food Co have you covered, and have developed the perfect South West Chipotle Sauce for both marinating, topping, drizzling and dunking.
It's just 3kcal per 15ml, gluten-free, fat-free, vegan-friendly, sugar-free and has no added sugars.
