Making your favourite breakfast meals can be tricky, especially when considering poached eggs. Eggs Benedict is a delightful dish that features the best components of any breakfast, bacon & eggs. 

Traditionally eggs benedict consists of an English muffin topped with a poached egg, some bacon (often Canadian bacon) and a generous serving of hollandaise sauce. However, at Skinny Food Co we regularly try and offer healthier alternatives to fan-favourite meals that are either less in carbs, sugars, calories or fat than the original recipes. 

For this breakfast favourite, we've swapped out the English Muffin and replaced it with slices of baked sweet potato, offering a sweet alternative and saving over 200 calories!

Eggs Benedict Recipe

This classic breakfast recipe is loved by many, whether it's a weekend breakfast idea or the perfect brunch menu item, Eggs Benedict(also known as eggs royale or eggs Florence) is every brunch enthusiast's favourite dish! You can doll it up with some baby spinach and even some cayenne pepper, but the key ingredients will always remain the creamy hollandaise and the delicious poached eggs. 

If you've never poached eggs before, don't worry! sometimes it can take a while to get the hang of it, so it might be best to have a couple of spare eggs lying around just in case. You can also purchase an egg poacher from your local supermarket which created perfect poached eggs every time without the hassle of poaching water. 

Method: 

  1. Preheat the oven to gas mark 6 / 200 degrees 
  2. For our sweet potato toast, we'll be slicing our large sweet potato into 1/2 inches and placing them on a baking tray to cook in the oven for 35 minutes
  3. When the potatoes are almost cooked, use our 1kcal olive oil spray on a medium frying pan and lightly fry your bacon for a couple of minutes, flipping each side until they're cooked with a slight crisp around the edges
  4. In a separate saucepan, fill with water and bring to a boil, once the water has begun bubbling, turn down the heat and allow it to simmer gently, it is recommended for poached eggs to add a drop of vinegar to the water. Taking your spoon begin creating a vortex ( a gentle whirlpool) and slowly tip the egg into the water. Cook for 3 minutes.
  5. In a small microwavable container (or on the hob) heat the Skinny Food Co Creamy Hollandaise Sauce and heat until it begins to bubble slightly - this should take roughly 2-3 minutes. 
  6. Roughly chop your parsley 
  7. Assemble, taking your sweet potato circles from the oven place two on each plate, followed by the slices of bacon, followed by the poached eggs and topped with a coating of hollandaise sauce and some salt & pepper.

How many calories are in Eggs Benedict 

Traditionally due to the hollandaise sauce eggs, benedict is not considered to be a healthy breakfast special. However, with our alternative swaps, we've managed to reduce the number of calories and sugars used in this meal, making it a classic breakfast special going forward.
