A Skinny Food Co Favourite following our most recent Thirsty Thursday episode, we've decided to share our secret recipes for the beloved Peppermint Espresso Martinis. 

In the run-up to Christmas, we at Skinny Food Co HQ have been regularly making fan-favourite cocktails with a festive spin, by using our delicious Cocktail Mixers we've created various cocktails from Mojitos to Pornstar Martinis, following our complete guide to cocktail making in order to help guide you to improving your mixologist skills.

  • Coffee Beans (for decoration)

We've decided to put a  spin on a traditional espresso martini, by making this absolutely delicious peppermint mocha martini using our zero-calorie & dairy free mocha creamer, this drink is 100% vegan-friendly (removing the after eights as decoration) and is ideal for coffee lovers and cocktail lovers combined! 

Not to mention, this classic cocktail is easy to make and one of the most fun cocktail recipes to create. If you're a fan of strong coffee flavours mixed with a splash of peppermint and some delicious


Decorating Your Cocktail Glass 

Before we jump to the method, let's talk about a few ways we can decorate our cocktail glasses to display the perfect drink, as it'll be much easier to do before pouring in your finished drink. 

There are a few options for decorations here: 

After Eights 

If you want to keep the look of the drink simple yet elegant, then make a slight incision into two after eights, you want to cut about a quarter of the way up one side of the square chocolate, be cautious as these can break easily. 

If you've been successful in your delicate handling you can place the  After-eights on the rim of your glass, and top it with subtle coffee beans once you've added the finished drink. 

(Unfortunately, After Eights are not vegan chocolate and therefore is not vegan-friendly)


Candy Cane Sugar Rim 

Want to add a festive twist? There's nothing better than adding a sugar rim to your cocktail, it takes the overall look of the drink from basic to sophisticated within seconds. Adding a festive candy cane rim will transform this drink instantly. 

For this, we used broken-up candy cane pieces, we used roughly 3-4 peppermint candies (beat with a wooden rolling pin in an airtight bag) and mixed them with granulated sugar. 

You'll need to wet the rim of your cocktail glass in order for the sugar and candy cane pieces to stick, you can do this by using an acidic fruit juice such as lime, lemon or orange. Or alternatively, you can try using our Candy Cane Syrup, Honey Syrup or Maple Syrup for a sweeter taste. 

Peppermint Espresso Martini Recipe 

Traditionally making an espresso martini involves an espresso machine or cold brew concentrate. However, we have our fantastic Espresso Martini Cocktail Mixer which is sugar-free, fat-free, gluten-free, zero-calorie, vegan-friendly & diabetic-friendly.

  1. Having your cocktail shaker to hand, grab a handful of ice cubes and add them to the shaker. 
  2. Pour in 200ml of our Espresso Martini Mix 
  3. Add 50ml of Vodka (or peppermint vodka/peppermint schnapps optional) 
  4. Add 1-2 drops of peppermint extract (this is very strong and does not require much)
  5. Add 100ml of our Skinny Food Co Mocha Creamer
  6. Shake well for 1-2 minutes, combining all the ingredients 
  7. Pour the contents into your newly designed & prepared cocktail glass
  8. Top with a couple of coffee beans as decorations and enjoy!
