Halloween cookie season is right around the corner! What better way to celebrate than with some delicious Halloween Gingerbread Cookies?

When you think of Gingerbread men, you may think of Christmas cookie cutters, in the shapes of gingerbread houses, trees, snowmen & Santa Clause- But, why not try Gingerbread for the spooky season? taking the classic & traditional Gingerbread man with a scary twist.

Let's get started, here's everything you'll need for your gingerbread creations.

Here’s a list of steps to follow when making these tasty treats:

1. Preheating The Oven

Preheat the oven to 180c / Gas Mark 4 

2. Mix Your Dry Ingredients

Starting with your dry ingredients, in a large mixing bowl combine the flour, flour bicarbonate & sugar

3. Add the Wet Ingredients 

Next, we're going to be adding your cubed butter & syrup. It's best to add the syrup drip by drip, as we don't want to make the mixture to be wet, we still want a dry breadcrumb-like consistency. If your mixture becomes too wet, add additional flour and bicarbonate of soda accordingly. 

4. Add the Egg

Making a well in your mixture, combine the egg and knead into a firm but smooth dough.

5. Prepare Your Worktop

Lightly flour your worktop surface, in preparation for rolling & shaping. 

Roll out the dough between two sheets of parchment paper to prevent sticking. Use a rolling pin to flatten the dough to about 3-5mm thick. 

6. Choose Your Shapes

Once rolled, take your gingerbread cookie dough and your chosen cookie cutters and begin making your shapes. For Halloween, you can choose spooky characters such as gingerbread skeletons, ghosts & ghouls, pumpkins or even monsters. 

Alternatively, you can stick with the traditional gingerbread man cookie cutter and add additional cookie decorations to make it more festive.

7. Bake the Cookies

once you've cut out cookies to your liking, place the shaped dough onto a lightly greased greaseproof paper on your oven tray and bake for 10- 12 minutes at 190c.

Remove from oven and allow to cool completely.

8. Frost the Cookies

After the cookies have cooled completely, frost them with your choice of icing sugar, whether that's a traditional royal icing, or a 'spooky' Halloween-themed blood icing You can choose to create your own icing ideas by adding a variety of food colourings to your white icing .
