 Banana Pancakes with Vanilla Syrup:

Start the day off right with a stack of fluffy banana pancakes topped with a drizzle of vanilla syrup. This delicious breakfast is sure to make your mum feel extra special!

Ingredients:

  • 350g self-raising flour
  • 1 tsp baking powder
  • 2 bananas 
  • 2 eggs
  • 1 tsp vanilla syrup 
  • 250ml milk 
  • 1 tsp butter (for frying) 

To Serve:

  • Additional banana slices
  • Handful of blueberries
  • 10ml Vanilla syrup (or any other skinny syrup of your choice)

Method

  1. Mix together the flour and baking powder in a large bowl, sifting as you go.
  2. Using a separate bowl, mash ripe bananas with a fork until creamy. Then add in the eggs, vanilla extract and milk, and whisk together.
  3. Create a hole in the centre of your dry ingredients, pour in the wet ingredients and mix quickly to form a consistent and silky batter.
  4. Melt a small amount of butter in a large non-stick pan over medium heat. Put 2-3 tablespoons of the mixture into the pan and cook for a few minutes until small bubbles start to form on top.
  5. Turn the pancake over and cook the opposite side for 1-2 minutes. Continue with the rest of the batter.
  6. Top with additional fruits and a generous drizzle of your chosen syrup

 

French Toast with Cinnamon Syrup:

A classic breakfast that’s sure to please! This French toast recipe is made with cinnamon-infused syrup for a sweet and delicious treat.

Ingredients:

  • 4 slices of white bread
  • 2 eggs
  • 1/4 cup of milk
  • 1 tsp ground cinnamon
  • 1 tsp butter (for frying) 

To Serve:

  • Cinnamon syrup (or any other skinny syrup of your choice)
  • Fresh raspberries, Blueberries or other berries of your choosing

Method

  1. Whisk together the eggs, milk and ground cinnamon in a shallow bowl.
  2. Heat a large non-stick pan over medium heat and melt the butter.
  3. Dip each slice of bread into the egg mixture, making sure both sides are evenly coated.
  4. Place the slices of bread onto the heated pan and cook for 2-3 minutes on each side until golden brown.
  5. Serve with a generous drizzle of cinnamon syrup and fresh berries. Enjoy!

 

Baked Eggs in Avocado

A healthy and delicious breakfast that’s perfect for Mother’s Day or even a mothers day brunch idea! Baked eggs in avocado are easy to prepare and are sure to impress.

Ingredients:

  • 2 avocados
  • 4 eggs
  • 1/4 cup of grated cheese (optional) 
  • Salt and pepper, to taste 

To Serve:

Fresh herbs or chopped chives (optional)

Method

  1. Preheat your oven to 200°C. Cut the avocados in half and remove the stones. Place them onto a baking tray.
  2. Crack an egg into each avocado half and top with grated cheese, if desired.
  3. Bake in the oven for 15-20 minutes until the eggs are cooked to your liking.
  4. Sprinkle with salt and pepper, and fresh herbs or chopped chives if desired. Enjoy!
