Espresso Martini Cheesecake
The Holiday season is well and truly underway, Which means great news for all you unique recipe lovers. With countless Cheesecake options, it can be hard to find the perfect one to suit your holiday mood, with a wide variety of Christmas Cheesecakes such as Gingerbread, Baileys, Chocolate Orange and more there are simply endless delicious options of flavours to pair with your cream cheese mixture and biscuit base.
This year we've opted for a new cheesecake recipe to focus on, and it's great news for all you cocktail lovers! We're introducing our Espresso Martini Cheesecake, which is easy to make and combines all the classic tastes of your favourite cream cheese dessert with your favourite holiday tipple.

Ingredients:
- 50g Salted Butter
- 100g Digestive Biscuits
- 280g Plain Greek Yoghurt
- 450g Low-Fat Cream Cheese
- 50g Vegan Honey
- 1 Tsp Vanilla Cheesecake Flavouring
- 50g Light Brown Sugar
- 60ml Espresso Shot
- 30ml Espresso Martini Flavouring
- 50ml chocaholic chocolate drops sauce
For this healthy Cheesecake alternative, we've decided to opt for some of our best-selling Skinny Food Co products to replace the typical ingredients.
How To Make Espresso Martini Cheesecake Mixture?
- Step One: We're going to begin making the base, for this step it is recommended that you use a food processor to gently blitz your digestive biscuits until they are a fine crumb-like texture, however, if you don't have one it's no worries! Simply wrap your oaty biscuits in an airtight bag or container and beat with a wooden rolling pin.
- Step Two: Prepare your baking tins or cheesecake cases by greasing them with additional salted butter, and lining them with parchment paper.
- Step Three: Begin melting your 50g Salted Butter on a low heat
- Step Four: Once your butter is melted, combine the butter with the biscuit crumble base and press firmly into the prepared cheesecake tin.
- Step Five: Allow the biscuit base to chill for a minimum of 30 minutes.
- Step Six: Begin making your soft cheese mixture, for this, we combine both the soft cheese with the greek yoghurt, vanilla cheesecake flavouring, 30ml of an espresso shot coffee mixture, 30ml espresso martini cocktail flavouring and an optional 25ml of coffee liqueur if desired.
- Step Seven: Whisk these ingredients together until thick & creamy
- Step Eight: Chill for a minimum of 12 hours
- Step Nine: Create a drizzle sauce by combining the remaining 30ml of espresso shot & your favourite Chocaholic Chocolate sauce (for this we used our Chocolate Drops, however depending on the desired flavour you could experiment with hazelnut, Orange or Malt Balls) and drizzle over the top of your set Cheesecake

Can I use yoghurt instead of cream cheese?
Definitely Yes! If you're looking for a healthier alternative to plain cream cheese or double cream, then using Greek Yoghurt as your cream mixture is an excellent substitute.
Greek yoghurt is also full of protein in comparison to traditional yoghurts, it's also considerably lower in fat, making it a win-win alternative.
For this recipe we decided to do half & half, combining Greek yoghurt and cream cheese for the ultimate creamy mixture that is healthier than standard plain cream cheese but still full of flavour.
Is cheesecake healthier than standard cake?
Whilst each cake is different in nutritional value, a cheesecake is roughly the same amount of calories as a standard cake, however, is on average 30% less fat than a chocolate cake.

Is cheesecake baked or chilled?
Both, there are two alternative ways to make cheesecakes, one involves baking and the other requires setting it in the fridge or freezer for a minimum of 12-24 hours.
Baking a cheesecake is done when the cheesecake includes eggs in the mixture,
Whereas a set cheesecake is easier to alter for vegan alternatives, as these mixtures do not include eggs.
